Barrel Aged Red Wine Morello | DOUBLE RELEASE

The Barrel Aged Series is back with a bang and you're in for a treat.

Question: What’s the most valuable ingredient in beer?
Hops? Malt? Yeast?
Really, it depends on the beer.
This week’s double release involves something more precious than any of these: Time.

Enter, our two new red-wine barrel aged beers.

Initially we fermented with a mixture of Belgian Trappist yeasts and our house souring cultures. After primary fermentation, we added Morello cherry to some recently emptied French red wine barrels. The barrels were then tucked away in the brewery for 18 months to rest.

18 months later it was the moment we had been waiting for and we were able to taste the beer. The beer was a red revelation! 

 

The brew team were thrilled at how the flavours had developed over time to create the complex layers and flavour profiles. They decided to release three quarters of this brew on its own as Morello Red.

The Morello Red is sour, with notes of bitter cherry, integrated with tannic and vinous notes from the lengthy barrel ageing.

But they didn't stop there. They wanted to discover how the funky tartness of Morello Red would blend with a stronger, sweeter beer. They blended Morello Red with a freshly brewed Imperial Stout to create Morello Stout.

The blend of the tart acidity of the Morello Red cuts through the sweetness of the stout, so that in Morello Stout we have a multidimensional beer that defies categorisation.

It’s truly a one-off and available in extremely limited quantities. 

These beers will continue to age wonderfully and can be cellared for many years. Best sampled as a pair: drink the Morello Red, followed by the Morello Stout.

Such small batch brews will not be available for long – particularly the Morello Stout which is a very small run.
